Day 82- Recipe Friday: Stuffed Zucchini

It is about that time of year when everyone who is growing zucchini in their garden starts to get giant zucchini an a lot of it....which is where this recipe comes in at the prefect time!

Baked stuffed Zucchini
  • 1 zucchini (1 - 2"thick)
  • ½ cup celery
  • 4 oz ground chicken breast or ground turkey breast
  • ¼ cup chopped onion
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 8 oz can no salt added tomato sauce
  • allspice, to taste
  • pepper, to taste
Cook zucchini in boiling water about 3 - 4 minutes or more depending on zucchini size...you want the insides kind of soft. Cut zucchini in half lengthwise and scoop out pulp (reserve pulp). Sprinkle with pepper.

Cook onion, garlic, celery and meat until lightly browned. Add rice, reserved pulp, and tomato sauce. Stuff mixture back into zucchini, place in shallow baking pan. Bake at 375 degrees for 30 minutes or until tender.

Makes 2 servings (usually with a little extra filling)
