Day 234- Recipe Friday: Spanish Rice ala Kelly

I make my own version of what i call Spanish Rice, but i make it all separately so that if i choose that week to eat something different then i am not stuck and wasting money because it goes bad and i have to toss it.

Spanish Rice ala Kelly-
  • cooked rice
  • mixed veggies (onion, mushroom, green beans, etc)
  • cooked brown rice
  • cooked chicken breasts
  • home made or canned spaghetti sauce (low sodium and sugar)
cooking veges
i start with onions on high heat for a couple mins in a non stick pan, no stirring, no pam or non stick spray because the onions have their own moisture that will cook them and the high heat will glaze the pan. add the mushrooms, chopped into bite size chunks and add them in and turn the heat down to medium, stirring occasionally. depending on the cook times of your other veges you would also ad them in at this point, even if frozen veges. if thawed then add them in at the end.

Spagetti sauce
2 cans of no salt added tomato sauce, Italian seasoning, Mrs dash garlic and herb seasoning and splenda or stevia. all seasonings & sweeteners to taste.

i store the rice, veges sauce and chicken separately and assemble as needed.

when assembling i measure out 1/2 c rice, 1 c+ veges, 4 oz chicken breasts, 1/4 - 1/2 c sauce. heat up and you have Spanish Rice ala Kelly :)
