Baked stuffed Zucchini
- 1 zucchini (1 - 2"thick)
- ½ cup celery
- 4 oz ground chicken breast or ground turkey breast
- ¼ cup chopped onion
- 2 cloves garlic, minced
- 1 cup cooked rice
- 8 oz can no salt added tomato sauce
- allspice, to taste
- pepper, to taste
Cook onion, garlic, celery and meat until lightly browned. Add rice, reserved pulp, and tomato sauce. Stuff mixture back into zucchini, place in shallow baking pan. Bake at 375 degrees for 30 minutes or until tender.
Makes 2 servings (usually with a little extra filling)
